Method
- Take the salmon out of the fridge 15-30 minutes prior to starting the recipe. Cut into 4 pieces, pat dry, and season with garlic powder and salt & pepper.
- Add butter and olive oil to a skillet over medium-high heat. When hot, add the salmon. Cook for 3-4 minutes on each side until lightly browned. Do not overcook.
- Transfer the salmon to a plate. In the same skillet, add the onions and saut? for about 5 minutes until softened and lightly golden.
- Add chicken broth, lemon juice, and Boursin to the skillet. Stir until smooth. Let bubble for about 4-5 minutes, then stir in chopped parsley.
- Return the salmon to the skillet. Cook for another 3-5 minutes or until cooked through and flaky, and the sauce has thickened. Season with salt & pepper if needed and serve immediately.
