Ingredients
  

Greens and Vegetables
  • 1 bunch collard greens, cleaned & chopped
  • 1 head cabbage, cleaned & chopped
  • 1 orange bell pepper, sliced
  • 2 tablespoons baking soda, divided
  • 1 cup white vinegar, divided
  • 2 cups chicken broth
  • 1/2 yellow onion
  • 2 smoked turkey tails
  • 1/2 stick butter
  • 1 tablespoon Worcestershire sauce
  • 1/2 tablespoon sea salt
  • 1 teaspoon black pepper
  • 1/2 tablespoon seasoned salt
  • 1 teaspoon cajun seasoning
  • 2 tablespoons granulated onion
  • 1 tablespoon granulated garlic
  • 1 teaspoon smoked paprika
  • 1 tablespoon chicken bouillon
  • 2 tablespoons brown sugar

Preparation and Cooking
  1. Add Pot Liquor ingredients along with the already measured seasoning blend to a large pot on medium/low heat, cover with lid & simmer for 30 minutes.
  2. While stock simmers, slice orange bell pepper into strips and set aside.
  3. Quarter and chop cabbage into 1-2? pieces, wash in a sink basin filled with clean, cold water, white vinegar & baking soda, and set aside in a large mixing bowl.
  4. Prepare collards by pulling the stems, stacking & rolling leaves, then cutting into 1-2? pieces. Wash cut greens in a sink basin filled with clean, cold water, white vinegar & baking soda, and set aside in a large mixing bowl.
  5. Add washed collard greens to simmering stock pot, cover & allow to cook for 30 minutes while stirring occasionally.
  6. After 30 minutes, add baking soda & white vinegar to the pot, stirring until fizzled out.
  7. Add sliced bell peppers & washed cabbage to the pot, cover, and allow to cook for 30 minutes while stirring occasionally.
  8. After 30 minutes, check mixed cabbage & collards for doneness and continue cooking until desired tenderness is reached or remove from heat if ready.

Notes
