Ingredients
  

  • 2.5 cups all purpose flour
  • 1 cup light brown sugar
  • 1 teaspoon kosher salt
  • 1.5 teaspoons baking powder
  • 0.125 teaspoon ground cardamom for muffins
  • 0.5 cups whole milk
  • 0.5 cups sour cream or plain yogurt
  • 0.25 cups flavorless oil such as grapeseed or melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract or paste
  • 0.5 cups blueberry jam
  • 0.125 teaspoon ground cardamom for glaze
  • 0.5 teaspoon vanilla extract or paste for glaze
  • 1 cup confectioner's sugar
  • 0.5 cups finely crushed freeze-dried blueberries or 2 tablespoons blueberry jam
  • 1-2 tablespoons milk for glaze

Method
 

  1. Mix blueberry jam, cardamom, and vanilla together and set aside.
  2. Prepare muffin tins by spraying with baking spray or lining with paper muffin liners.
  3. Preheat oven to 400 degrees F.
  4. Mix dry ingredients in a large mixing bowl and set aside.
  5. Mix wet ingredients in a medium bowl or large, spouted measuring cup.
  6. Pour wet ingredients into dry and mix gently until just combined.
  7. Fill muffin cups halfway with batter.
  8. Add one teaspoon of jam to each muffin cup.
  9. Fill muffin cups with remaining batter.
  10. Top each with one more teaspoon of jam and swirl jam from top to bottom and side to side using a chopstick or skewer.
  11. Bake muffins in preheated oven for 15-18 minutes until puffed, golden, and set.
  12. Remove muffins from oven and let cool slightly before transferring to a parchment-lined surface.
  13. To prepare glaze, place all glaze ingredients in a small bowl and add just enough milk to make a smooth, pourable glaze.
  14. Once muffins are cooled to room temp, spread or pour glaze over the top.
