  • 1/2 cup roughly chopped cilantro
  • 1/2 cup roasted cashews roughly chopped, about 80 g
  • toasted sesame seeds for garnish
  • 1/4 cup tahini about 55 g
  • 3 tbsp toasted sesame oil about 25 g
  • 3 tbsp coconut aminos or soy sauce about 30 g
  • 3 tbsp lemon juice or rice wine vinegar about 33 g
  • 1 tbsp honey about 18 g
  • 1/2 tsp kosher salt
  • 1/2 tsp ground ginger
  • 1/4 tsp garlic powder
  • 1/4 tsp cayenne pepper

Equipment

  • oven
  • Baking sheet
  • whisk
  • large serving bowl

Method

  1. Preheat your oven to 450?F and line a baking sheet with parchment paper.
  2. Dump the cashews onto the prepared baking sheet and bake for no more than 5 minutes, tossing halfway through to ensure even roasting. Once done, cool on a cutting board or plate.
  3. Chop the tofu into small cubes and place on the same baking sheet. Drizzle with avocado oil and season with white pepper and kosher salt, then toss to coat. Bake for 20-25 minutes or until golden brown and crisp.
  4. Prep the cabbage, scallions, edamame, and roughly chop the roasted cashews. Add to a large serving bowl.
  5. For the dressing, whisk together tahini, toasted sesame oil, coconut aminos or soy sauce, lemon juice or rice wine vinegar, honey, kosher salt, ground ginger, garlic powder, and cayenne pepper until silky smooth. Adjust seasonings as needed.
  6. Pour half of the dressing over the salad ingredients and toss to combine. Taste and add more dressing and/or salt as needed. Garnish with toasted sesame seeds.
