Chimichurri Sauce

Method
 

Preparation
  1. Make the chimichurri sauce by mixing parsley, oregano, chili pepper, garlic, olive oil, vinegar, salt, and pepper in a bowl.
  2. Pour ? of the chimichurri sauce over the chicken thighs in a bowl, ensuring they're well coated. Cover and marinate in the fridge for 20 to 30 minutes.
  3. Heat the grill over medium-high heat, oil the grates, and grill the chicken for 4 to 6 minutes per side until it reaches an internal temperature of 165?F (75?C).
  4. Transfer the chicken to a serving plate and spoon the remaining chimichurri sauce on top before serving.
