  • 1 large yellow onion, chopped (about 1 1/2 cups)
  • 2 large carrots, chopped (about 1 1/2 cups)
  • 3 stalks celery, chopped (about 1 1/2 cups)
  • 4 cloves garlic, minced (about 2 tbsp)
Spices and Seasonings
  • 1 tbsp whole-grain mustard
  • 1 tsp caraway seeds
  • 1/2 tsp dried thyme
  • 1/2 tsp kosher salt
  • 1/2 tsp ground black pepper
Broth and Vegetables
  • 8 cups beef broth
  • 4 cups green cabbage, chopped (? of a small head, into 1-inch pieces)
  • 2 cups red or gold potatoes, quartered (about ? pound)
  • 4 cups cooked corned beef, cubed (about 1 ? lbs)
  • 2 tbsp parsley, finely chopped

Method
 

Cooking Steps
  1. Heat olive oil in a Dutch oven or soup pot over medium heat. Add the onion, carrots, and celery and saut? for 5 minutes, stirring frequently.
  2. Add garlic, mustard, caraway seeds, thyme, salt, and black pepper and cook for another 5 minutes.
  3. Add the beef broth, cabbage, and potatoes. Stir and bring to a boil. Reduce heat to simmer, cover, and cook for 20 minutes.
  4. Add the corned beef, stir, and cover. Cook for another 10 minutes, or until corned beef is warmed through and the cabbage, potatoes, and carrots are tender. Season to taste.
