Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 3 teaspoons baking powder
  • ? teaspoon salt

  • 1 cup granulated sugar

  • 1-2 tablespoon flour for tossing peaches
Wet Ingredients
  • 6.5 tablespoon unsalted butter melted
  • 2 large eggs (or 3 small)
  • 1 cup Greek yogurt
  • ? cup vegetable oil
  • 1 teaspoon vanilla extract
Peaches
  • 2 and 1/3 cups peeled, chopped peaches divided (1 and 1/3 cups for batter and 1 cup for topping)
Glaze
  • 1 cup powdered sugar
  • 1-2 tablespoon milk
  • ? teaspoon vanilla

Method
 

Muffin Preparation
  1. Preheat oven to 400?F and line a cupcake pan with paper liners.
  2. In a small bowl, whisk together flour, granulated sugar, brown sugar, and cinnamon for the crumb topping. Add melted butter and stir until crumbly. Refrigerate.
  3. In a large bowl, stir together 1 cup flour, baking powder, and salt.
  4. In a medium bowl, whisk sugar and eggs until combined. Whisk in yogurt, vegetable oil, and vanilla until pale.
  5. Fold the wet ingredients into the dry ingredients until combined.
  6. Reserve 1 cup of the chopped peaches for topping. Dust the remaining peaches with 1 tablespoon flour and toss to coat, then fold gently into the batter.
  7. Fill muffin tins 2/3 full with batter and gently press the reserved peaches on top. Sprinkle crumb topping over muffins.
  8. Bake for 5 minutes at 400?F, then lower the temperature to 375?F and continue to bake for 15 minutes or until a toothpick comes out clean.
  9. Cool in the pan for 5 minutes, then transfer to a wire rack.
  10. For the glaze, stir together powdered sugar, vanilla, and milk. Adjust the consistency with more powdered sugar or milk as needed and drizzle over muffins.
