Ingredients
  

Vegetables
  • 2 medium sweet potatoes peeled and finely diced
Salad Base
  • 12 oz bowtie noodles
  • 3 cups spinach
Cheeses
  • 5 oz goat cheese crumbled
  • 6 oz sharp white cheddar crumbled
Seasonings
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 6-8 stalks fresh thyme
Extras
  • 1/2 cup dried cranberries
  • 1/3 cup roasted pumpkin seeds
Dressing
  • 1/2 cup olive oil
  • 1/4 cup maple syrup
  • 1/4 cup apple cider vinegar
  • 1/2 tsp salt
  • 2 tbsp dijon mustard
  • 1/2 tsp poppy seeds

Method
 

Cooking Steps
  1. Preheat the air fryer (or oven) to 400?F. Peel and finely dice the sweet potatoes.
  2. Toss the sweet potato cubes in a bowl with olive oil, salt, and pepper. Roast in the air fryer for 14-18 minutes or in the oven for ~30 minutes until golden brown and fork tender, stirring a few times to avoid burning.
  3. Cook the bowtie noodles 1-2 minutes less than package instructions in salted water until al dente. Drain and do not rinse.
  4. Add the warm, cooked noodles to a large mixing bowl and fold in the spinach immediately.
  5. Fold in the roasted sweet potatoes, cubed cheddar cheese, pumpkin seeds, goat cheese, fresh thyme, and dried cranberries. Toss together.
  6. Shake all dressing ingredients in a mason jar until combined, then pour into the salad and toss.
  7. Serve warm or at room temperature.
