Ingredients
  

  • ? cup plain yogurt or Greek yogurt
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract

  • 1? cups all-purpose flour
  • 2 teaspoons baking powder
  • ? teaspoon salt
  • ? cup neutral flavored oil e.g., canola, vegetable, sunflower, safflower, avocado or grapeseed
  • ? cup granulated sugar for glaze
  • 3 tablespoons butter
  • 1? tablespoons water
  • 1 teaspoon vanilla extract for glaze
  • ? teaspoon almond extract for glaze

Method
 

  1. Preheat the oven to 350?F (175?C). Spray an 8-inch round cake pan with baking spray, rub the inside surface of the pan with a paper towel, line the bottom with parchment paper, and spray the parchment paper lightly. Set aside.
  2. In a large bowl, combine the yogurt, sugar, eggs, vanilla extract, and almond extract. Whisk until well blended.
  3. Add the baking powder and salt. Whisk to combine, then add the flour and whisk again just until all of the flour is blended in.
  4. Add the oil and stir well until smooth.
  5. Pour the batter into the prepared pan.
  6. Bake for 30-40 minutes, until the cake feels springy to the touch and a toothpick inserted into the center comes out clean.
  7. While the cake cools, prepare the glaze by combining the sugar, butter, water, vanilla extract, and almond extract in a small saucepan. Cook over medium heat, stirring frequently, until the butter is melted and the sugar has dissolved.
  8. Using a pastry brush, slowly brush the glaze all over the top of the cake, using about a quarter of the mixture.
  9. Flip the cake out onto a cooling rack set on top of a sheet of parchment paper or foil. The bottom of the cake will now be the top.
  10. Brush the remaining glaze over the top and sides of the cake until the glaze is gone. Allow the cake to cool for at least 30 minutes before serving. Sprinkle with powdered sugar if desired before serving.
