Ingredients

  • 1.5 - 2 kg octopus
Vegetables
  • 800 grams potatoes peeled and cut into 5 cm pieces
  • 2 medium onions finely chopped
Liquids
  • ? tablespoon tomato paste
  • 150 ml sweet red wine or adjust to taste
Spices and Oils
  • ? teaspoon ground pepper
  • 1 leaf bay leaf
  • 12 tablespoons extra virgin olive oil
  • freshly ground pepper to serve

Method
 

Cooking Steps
  1. Cut the octopus into 5-6 cm large pieces. Cut the thinner part of the legs longer at about 10 cm. Remove the eyes and teeth, and slice open the head into 5-6 cm pieces.
  2. Rinse the octopus in a strainer for a few seconds.
  3. Add the octopus to a medium-sized cooking pot.
  4. In the pot, add the onions, bay leaf, wine, and 600 ml of water.
  5. Bring to a boil, then lower the heat to medium and partly cover the pot.
  6. Simmer for about an hour until the octopus is tender when pricked with a knife.
  7. Add the tomato paste, pepper, olive oil, and potatoes. Lower the heat to medium-low.
  8. Simmer until the potatoes are cooked and the sauce thickens, about 30-40 minutes, shaking often and stirring to prevent sticking.
  9. Let the stew sit in the pot for 20 minutes before serving.
  10. Serve with plenty of freshly ground pepper on top!
