Ingredients
  

Sugar and Cinnamon Mixture
  • 1/4 cup granulated sugar for the swirl
  • 1.5 teaspoons ground cinnamon for the swirl
Wet Ingredients
  • 1/4 cup unsalted butter melted
  • 3 large overripe bananas mashed
  • 1/3 cup granulated sugar for the batter
  • 1/3 cup brown sugar packed
  • 2 large eggs room temperature
  • 1/4 cup plain Greek yogurt or sour cream
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1.5 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1.5 cups all-purpose flour

Method
 

Baking Process
  1. Preheat your oven to 350 degrees F. Line an 8.5 x 4.5? or 9 x 5? loaf pan with parchment paper or grease the pan generously.
  2. In a small bowl, stir together granulated sugar and cinnamon until well-combined. Set aside.
  3. Melt the butter and add to a large bowl. Mash the bananas into the melted butter until completely smooth.
  4. Whisk in the granulated sugar and brown sugar until well-combined. Add the eggs, one at a time, and whisk each until combined.
  5. Add the yogurt, vanilla, salt, baking powder, and baking soda to the mixture and whisk until thoroughly combined and smooth.
  6. Add the flour all at once and stir with a fork or spatula until the batter just comes together. Do not over-mix.
  7. Pour about half of the batter into the prepared pan and smooth it out. Sprinkle about half of the cinnamon sugar evenly over the batter.
  8. Pour and spread the remaining batter carefully over the cinnamon sugar layer, trying not to disturb it. Sprinkle the remaining cinnamon sugar evenly over the top.
  9. Bake for 50-60 minutes, until a toothpick inserted in the center comes out clean or with just a couple crumbs attached.
  10. Cool almost completely in the pan before removing to a plate or wire rack for about 30 minutes.
