Egg Mixture
  • 12 pieces hard-cooked eggs peeled and halved
  • ? cup mayonnaise
  • 1 tablespoon Dijon mustard
  • ? teaspoon ground black pepper
  • ? cup finely chopped prosciutto
  • ? cup grated Parmesan cheese
Garnish
  • basil pesto for drizzling
  • snipped fresh chives optional for garnish

Method
 

Preparation
  1. Halve hard-cooked eggs lengthwise removing the yolks. Set whites aside.
  2. Place yolks in a small bowl; mash with a fork.
  3. Stir in mayonnaise, mustard, and pepper.
  4. Fold in prosciutto and Parmesan cheese.
  5. Using a zip-lock bag or spoon, stuff egg white halves with the yolk mixture.
  6. If desired, cover and chill for up to 24 hours.
  7. Garnish with additional prosciutto, a dab of pesto, and/or chives before serving.
