Ingredients
  

Chicken and Marinade
  • 1 lb chicken breasts
  • 1.5 tablespoon bicarb of soda
Vegetables
  • 2.5 cups sliced mushrooms
  • 1 clove garlic
  • 2 green onions chopped into 2-inch lengths
Sauce Ingredients
  • 1 tablespoon oil for frying
  • 0.75 cup cold chicken stock/broth to prevent clumping in sauce
  • 2 tablespoon cornstarch
  • 2 tablespoon Chinese Cooking Wine
  • 2 tablespoon soy sauce
  • 1 teaspoon oyster sauce
  • 2 teaspoon sesame oil
  • 0.25 teaspoon pepper
  • 1 teaspoon sugar

Method
 

Cooking Steps
  1. Cut the chicken into thin strips across the grain. Place in a bowl and sprinkle with the baking soda, stir gently to coat. Cover and let marinate for 15 minutes.
  2. Wash off the baking soda and rinse the chicken several times, then pat dry with kitchen paper.
  3. Add all sauce ingredients into a large measuring cup and stir well, ensuring the broth is cold to prevent clumping.
  4. Pour oil into a heavy-based frying pan over high heat.
  5. Chop the green onions into 2-inch lengths and add to the hot oil. Stir fry for 1 minute.
  6. Add the chicken to the pan and cook for 2 minutes, stirring constantly.
  7. Add the chopped mushrooms and stir fry for a further 2 minutes.
  8. Add the sliced garlic and stir constantly for 1 minute.
  9. Stir the prepared sauce and pour it into the pan, stirring to coat the stir fry as the sauce thickens.
  10. Serve immediately.
