Method
 

  1. Preheat oven to 350?.
  2. Line cookie sheets with parchment paper.
  3. In a medium bowl, combine with a whisk the flour, baking powder, salt, and poppy seeds.
  4. In a large bowl, combine the sugar and the zest of one orange, working the zest into the sugar.
  5. Add butter and beat until light and fluffy, then add egg and beat well.
  6. Beat in orange juice, ricotta, and extracts until well mixed.
  7. Slowly add in the dry ingredients and mix well.
  8. Use a 2 tablespoon scoop to place dough on cookie sheets, leaving 2 inches between each.
  9. Bake for about 18 minutes until golden brown at the edge.
  10. Remove from oven and rest on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  11. Make the glaze by combining the powdered sugar, orange juice, and zest.
  12. Place about a teaspoon of glaze on each cookie and let dry until hardened.
  13. Store in an airtight container for up to 5 days.
