Cupcake Batter
  • 1.5 cups all purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 2 tsp ground cinnamon
  • 1.5 tsp pumpkin pie spice
  • 0.25 tsp kosher salt
  • 0.5 cup granulated sugar
  • 0.5 cup dark brown sugar packed
  • 0.5 cup vegetable oil
  • 1.5 cups pumpkin puree
  • 2 tsp vanilla extract
  • 2 large eggs
Frosting
  • 0.5 cup unsalted butter room temp
  • 8 oz cream cheese room temp
  • 4 cups powdered sugar
  • 0.5 tsp ground cinnamon
  • 0.5 tsp vanilla extract
Mini Pumpkin Topping
  • 0.5 cup creamy peanut butter
  • 3 tbsp unsalted butter room temp
  • 1 cup powdered sugar plus 2?3 tbsp as needed
  • 0.25 tsp pumpkin pie spice
  • 0.5 tsp vanilla extract
  • 0.25 cup granulated sugar
  • 2 tsp ground cinnamon
  • 1 cup mini chocolate chips

Method
 

Cupcake Preparation
  1. Preheat the oven to 350F and line a cupcake pan with 12 paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt.
  3. In a large mixing bowl, whisk together the sugars, oil, and pumpkin, followed by the vanilla and eggs.
  4. Pour the dry ingredients into the wet ingredients and mix to combine.
  5. Divide the batter between the liners, filling each about 2/3 full.
  6. Bake for 16-18 minutes or until a toothpick in the center comes out clean with a few moist crumbs.
Frosting and Topping Preparation
  1. While the cupcakes cool, make the frosting by mixing together the butter and cream cheese until smooth.
  2. Mix in 1 cup of powdered sugar at a time, followed by the cinnamon and vanilla. Store in the refrigerator until ready to frost.
  3. For the mini pumpkins, mix together the peanut butter and butter.
  4. Mix in the powdered sugar and pumpkin pie spice, followed by the vanilla. It should be the consistency of play-doh; add more powdered sugar if too thin.
  5. Mix together the cinnamon and sugar in a side dish.
  6. Scoop out 1/2 tbsp of dough and roll it into a ball. Press ridges around the ball, then roll in the cinnamon sugar.
  7. Press a mini chocolate chip on top to finish the pumpkin. Store in the refrigerator until ready to decorate.
Final Assembly
  1. When the cupcakes have cooled, fill a piping bag with the frosting and pipe onto each cupcake.
  2. Sprinkle with cinnamon sugar and press a pumpkin on top. Store in the refrigerator until ready to serve.
