Ingredients
  

Mushrooms
  • 2 pounds button or cremini mushrooms washed, trimmed, and quartered
  • 1/4 cup extra-virgin olive oil
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • 8 to 12 sprigs thyme or rosemary
  • 2 tablespoons chopped parsley, chives, tarragon or other fresh herbs

Method
 

Roasting Process
  1. Adjust oven rack to the center position and preheat oven to 375?F (190?C).
  2. Toss mushrooms with olive oil and season with salt and pepper.
  3. Transfer mushrooms to a foil-lined rimmed baking sheet and spread into an even layer.
  4. Spread thyme or rosemary sprigs on top of mushrooms.
  5. Transfer to the oven and roast until mushrooms release liquid, about 15 minutes.
  6. Carefully drain liquid into a separate container and reserve for another use.
  7. Return mushrooms to the oven and continue roasting until browned but still tender, about 30 minutes longer.
  8. Discard thyme or rosemary.
  9. Transfer to a bowl and toss with parsley, chives, or tarragon.
  10. Serve immediately.
