Method
- In a small bowl, combine the ingredients for the sauce and set aside.
- Cook soba noodles according to package instructions. Rinse under cool running water to stop cooking.
- Prepare cucumber using a julienne tool. Cut into matchstick pieces if necessary.
- Once noodles are rinsed, return to the pot, add cucumber, cilantro, and about 3/4 of the sauce, then toss well.
- In a serving dish, add half of the noodle mixture, top with half of the remaining sauce, and season with salt & pepper to taste. Add lime juice as desired.
- Serve warm or cold.
