Ingredients
  

  • 1 package soba noodles (8 or 9 oz.)
  • 1 large English cucumber julienned
  • 1/2 cup cilantro roughly chopped
  • lime wedges
  • 3/4 cup scallions (green onions, thinly sliced)
  • 2 cloves garlic minced
  • 2 tablespoons fresh ginger grated or minced
  • 2 tablespoons sesame seeds
  • 2 tablespoons rice wine vinegar (unseasoned)
  • 2 tablespoons pure maple syrup
  • 1 tablespoon toasted sesame oil
  • 1 to 2 tablespoons tamari (or soy sauce or Namo Shoyu)
  • 1 to 2 teaspoons red pepper flakes to taste
  • 1/2 teaspoon sriracha optional

Method
 

  1. In a small bowl, combine the ingredients for the sauce and set aside.
  2. Cook soba noodles according to package instructions. Rinse under cool running water to stop cooking.
  3. Prepare cucumber using a julienne tool. Cut into matchstick pieces if necessary.
  4. Once noodles are rinsed, return to the pot, add cucumber, cilantro, and about 3/4 of the sauce, then toss well.
  5. In a serving dish, add half of the noodle mixture, top with half of the remaining sauce, and season with salt & pepper to taste. Add lime juice as desired.
  6. Serve warm or cold.
