Ingredients
  

  • 10 cups raw spinach
  • 1 tablespoon olive oil
  • Salt to taste
  • Garlic seasoning to taste

Method
 

  1. Cut off the stems and discard. Rinse chopped spinach in cold water. Drain the spinach and repeat, soaking and draining until excess moisture is removed.
  2. Add olive oil to a pan. Cover and heat for 2 minutes on medium heat. If using fresh chopped garlic, saut? for 30 seconds until it begins to brown.
  3. Add the spinach to the pan, packing it down. Sprinkle salt and garlic seasoning to taste on top, turning over with tongs as you coat with olive oil and herbs. Cover the pan and cook for 1 minute. Uncover and turn the spinach over again. Cover the pan and cook for an additional 1 minute.
  4. Spinach should be fully wilted after 2 minutes of covered cooking. Remove from heat. Drain any excess liquid from the pan. Sprinkle with salt to taste. Serve immediately.
