Method
- Peel and slice the onion. Peel and slice the cloves from the head of garlic.
- In a saucepan, saut? the onion for a few minutes until soft, then add the garlic without browning it. Sprinkle with flour, cook for a minute, and pour in the hot broth.
- Season with salt, add thyme or bay leaves, and simmer for about 30 minutes, until the garlic is cooked.
- Meanwhile, slice the remaining two garlic cloves and saut? them in a bit of oil in a pan until golden.
- Return to the soup, blend until smooth and season with pepper. Warm again, add the egg white and stir quickly. Then add the yolk mixed with 1 teaspoon of vinegar and stir into the soup.
- Serve hot with the saut?ed garlic, a drizzle of oil or melted duck fat, and a mint leaf.
