Ingredients
  

  • 1 head garlic 6-7 cloves + 2 additional cloves for saut?ing
  • 1 onion peeled and sliced
  • 30 g duck fat or 2 tablespoons of olive oil
  • 1 tablespoon flour
  • 1.5 liters chicken broth
  • 2 stems thyme or bay leaves
  • to taste salt
  • to taste pepper
  • optional mint for garnish
  • 1 egg egg whites and yolk separated

Method
 

  1. Peel and slice the onion. Peel and slice the cloves from the head of garlic.
  2. In a saucepan, saut? the onion for a few minutes until soft, then add the garlic without browning it. Sprinkle with flour, cook for a minute, and pour in the hot broth.
  3. Season with salt, add thyme or bay leaves, and simmer for about 30 minutes, until the garlic is cooked.
  4. Meanwhile, slice the remaining two garlic cloves and saut? them in a bit of oil in a pan until golden.
  5. Return to the soup, blend until smooth and season with pepper. Warm again, add the egg white and stir quickly. Then add the yolk mixed with 1 teaspoon of vinegar and stir into the soup.
  6. Serve hot with the saut?ed garlic, a drizzle of oil or melted duck fat, and a mint leaf.
