Ingredients
  

  • 4 large portobello mushrooms 4-6 inches in diameter
  • 2 tablespoons olive oil divided
  • 2 cups spinach
  • ? cup red bell pepper diced
  • ? cup red onion diced
  • 1 teaspoon Italian seasoning
  • ? teaspoon red pepper flakes
  • ? teaspoon salt
  • ? teaspoon black pepper
  • ? teaspoon paprika
  • 4 cloves garlic minced
  • 1 cup parmesan cheese
  • 4 ounces cream cheese softened
  • ? cup sour cream
  • ? cup tomatoes diced
  • ? cup breadcrumbs
  • ? cup fresh parsley
  • ? cup mozzarella cheese shredded
  • 1 tablespoon fresh herbs for garnish

Method
 

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Wipe off the mushrooms to remove dirt, remove the stems, and scrape out any dark gills.
  3. Place the mushrooms on a 9?13 sheet pan lined with parchment paper.
  4. In a large saut? pan, add 1 tablespoon of olive oil and heat over medium-high heat. Add spinach, red bell pepper, red onion, Italian seasoning, red pepper flakes, salt, pepper, and paprika. Saut? for 5 minutes or until the spinach has wilted; add garlic in the last 30 seconds.
  5. Add parmesan cheese, cream cheese, sour cream, tomatoes, breadcrumbs, and parsley (reserve 1 tablespoon for garnish) to the saut?ed vegetables. Stir for 1-2 minutes until fully incorporated and heated through.
  6. Use a spoon to fill the mushroom caps with the mixture from the skillet.
  7. Top with mozzarella cheese.
  8. Bake on a rack in the middle of the oven for 17 minutes or until the mushrooms start to become tender.
  9. Baste the outside of the mushrooms with the remaining 1 tablespoon of olive oil using a pastry brush. Bake for an additional 5 minutes.
  10. Turn the oven to broil on high for 1-2 minutes or until the tops are golden brown.
  11. Garnish with fresh parsley and red bell peppers. Serve warm.
