  • 1/2 cup unsalted butter, melted
  • 2 1/2 cups all-purpose flour
  • 1 cup packed light brown sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp kosher salt
  • 1 1/4 cups whole milk
  • 1 tsp pure vanilla extract
  • 1 cup granulated sugar
  • 2 tsp ground cinnamon
  • 1 1/2 cups hot water
  • 1 scoop vanilla ice cream for serving

Preparation
  1. Arrange a rack in the center of the oven; preheat to 350?F. Pour melted butter into the bottom of a 13" x 9" baking dish.
  2. In a large bowl, whisk together flour, brown sugar, baking powder, and salt. Add milk and vanilla extract and whisk until combined, leaving a few lumps.
  3. Gently spoon the batter over the melted butter, being careful not to mix.
  4. In a small bowl, whisk together granulated sugar and cinnamon. Pour this mixture evenly over the batter.
  5. Slowly pour hot water over the sugar mixture.
  6. Bake the cobbler until golden and puffed, about 30 to 35 minutes. Allow to cool for 10 minutes. Serve warm with a scoop of ice cream.
