  • 0.5 tsp paprika
  • 0.5 tsp garlic powder

  • 0.33 cup extra virgin olive oil for dressing
  • 1 medium fresh lemon juiced
  • 1 tbsp yacon syrup
  • 0.5 tsp ground cumin
  • salt to taste (for dressing)
  • 0.5 tsp garlic powder for dressing
Beans and Extras
  • 1 can white beans rinsed and drained
  • 1 to 2 tbsp cranberries
  • 1 bunch frozen mint finely chopped
  • 1 block feta or a vegan alternative for a plant-based version

Method
 

Cooking Process
  1. Preheat the oven to 220?C (425?F).
  2. On a baking sheet lined with parchment paper, spread the sweet potato cubes on one side and the cooked quinoa on the other.
  3. Drizzle the sweet potatoes with half the olive oil, add the paprika, garlic powder, salt, and pepper.
  4. Season the quinoa with the remaining oil, a little salt, and garlic powder.
  5. Bake for about 30 minutes, stirring the quinoa halfway through to ensure even crispiness.
  6. Meanwhile, prepare the dressing by mixing the olive oil, lemon juice, yacon syrup, cumin, garlic powder, salt, and pepper in a bowl.
  7. In a large salad bowl, combine the roasted sweet potatoes, crispy quinoa, white beans, cranberries, and chopped mint.
  8. Add the crumbled feta, drizzle with the dressing, and toss gently.
  9. Serve immediately to enjoy the crispiness of the quinoa.
