Ingredients

Dry Ingredients
  • 1.75 cups all-purpose flour (9 ounces), more for dusting
  • 3 tablespoons cane sugar or any
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.33 cup freeze dried blueberries optional
Wet Ingredients
  • 1 cup Greek yogurt
  • 1 teaspoon pure vanilla extract
  • 0.5 cup blueberries fresh or frozen
  • 1 egg beaten

Equipment

  • oven
  • Baking sheet
  • parchment paper
  • food processor
  • large bowl
  • spatula
  • small bowl

Method

Preparation
  1. Preheat oven to 375 degrees F and line a large baking sheet with parchment paper. Set aside.
  2. If using freeze dried blueberries, add them to a food processor or high speed blender and process into powder.
  3. In a large bowl, add flour, sugar, baking powder, salt, and freeze dried blueberries powder (if using); whisk well.
  4. Add Greek yogurt and vanilla, stir with a spatula to combine. Then mix with your hands until a ball of dough forms. Knead it about 20 times until the dough is firm but not sticky or dry.
  5. Add blueberries and gently fold a few times to incorporate without crushing them. Cover with a towel and let rest for 10 minutes.
Shaping and Baking
  1. Transfer dough onto a floured counter, form into a round shape and cut into 4 even pieces. Roll each piece into a long rope, tucking in blueberries to avoid air pockets, and pinch the ends into a bagel shape, ensuring a large hole in the center.
  2. Place bagels on the prepared baking sheet.
  3. In a small bowl, whisk the egg and brush it over the bagels.
  4. Bake for 25 minutes or until golden brown and puffy. Remove from the oven and let rest for 15 minutes before slicing and serving.
