  • 0.75 cups sugar
  • 1 teaspoon baking powder

  • 0.5 teaspoon salt
  • 2 large eggs
  • 0.25 cups milk
  • 0.25 cups orange juice
  • 1 tablespoon orange zest
  • 0.25 cups butter (unsalted and melted)
Glaze ingredients
  • 1 cup powdered sugar
  • 1-2 tablespoons orange juice for consistency
  • 1 tablespoon orange zest

Method
 

Baking the Bread
  1. Preheat your oven to 350°F. Spray a 8.5 x 4.5-inch loaf pan with nonstick cooking spray.
  2. Sprinkle a teaspoon of flour over the cranberries and mix; set aside.
  3. In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt.
  4. In a separate bowl, whisk together the eggs, milk, orange juice, orange zest, and melted butter.
  5. Pour the wet ingredients into the dry ingredients and mix until no large lumps remain. Gently fold in the prepared cranberries.
  6. Evenly distribute the batter into the prepared pan and transfer it to the oven. Bake for about 45 minutes to 1 hour, testing for doneness with a toothpick.
  7. Allow the bread to cool completely in the pan.
  8. In a medium bowl, combine all the orange glaze ingredients and whisk until well incorporated.
  9. Generously drizzle the orange glaze over the bread, slice, and serve.
