Ingredients
  

Marinade
  • 1/4 cup white wine vinegar
  • 1 clove garlic crushed and peeled
  • 1 tablespoon chopped fresh herbs your choice
  • pinch red pepper flakes
  • 1/4-1/2 teaspoon salt to taste
  • 1/4 teaspoon freshly cracked black pepper
  • 1/2 cup extra virgin olive oil good-quality
Vegetables
  • 1/2 small-medium red onion very thinly sliced
  • 1 medium zucchini thinly sliced

Method
 

Preparation
  1. In a medium bowl, whisk together the white wine vinegar, garlic, chopped herbs, red pepper flakes, 1/4 teaspoon of salt, black pepper, and olive oil until combined.
  2. Add the sliced zucchini and red onion, then toss to combine.
  3. Let them marinate for 20-30 minutes, or up to 1 hour at room temperature.
  4. After they've sat, taste and season with additional salt if needed.
  5. Store in a sealed container in the fridge for up to 1 week.
