Ingredients
  

  • 2 cups broccoli florets
  • ½ cup parmesan cheese, grated
  • 1 tsp salt
  • 1 tsp pepper
  • ¼ cup onion, grated or finely chopped
  • 1 ea egg
  • cup breadcrumbs or panko
  • 2 tbsp parsley, chopped
  • 1 tbsp Italian seasoning
  • to taste tbsp olive oil

Method
 

  1. Preheat oven to 400°F. Line baking sheet with parchment paper and set aside.
  2. Heat a pot of water and bring to a boil. Blanch the broccoli in the boiling water for 1 minute then drain.
  3. Very finely chop the broccoli and add to a mixing bowl with onions, egg, parmesan cheese, breadcrumbs, parsley, Italian seasoning, salt, and pepper. Mix well.
  4. Scoop out about 1 tbsp of the mixture and form the tots into cylindrical shapes with flat ends. Place onto baking sheet.
  5. Drizzle tots with olive oil and bake in oven for 20-25 minutes, turning halfway.
  6. Serve and enjoy with your favorite dipping sauce.
