Ingredients
  

Pasta
  • 2 cups elbow macaroni uncooked
Eggs
  • 4 large hard-boiled eggs peeled and chopped
Vegetables
  • 1 cup celery diced
  • 1/2 cup red onion diced
  • 1/2 cup sweet pickle relish
Dressing
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1/4 teaspoon paprika for garnish

Method
 

Prepare the Pasta
  1. Cook the elbow macaroni according to package instructions until al dente. Drain and rinse under cold water to cool.
Make the Dressing
  1. In a mixing bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper until smooth.
Combine Ingredients
  1. In a large bowl, combine the cooled macaroni, chopped hard-boiled eggs, diced celery, diced red onion, and sweet pickle relish.
  2. Pour the dressing over the macaroni mixture and gently stir until well combined.
Serve
  1. Transfer the salad to a serving dish, sprinkle with paprika, and serve chilled or at room temperature.
