Ingredients
  

Egg Filling
  • 6 large eggs hard-boiled
  • 3 tablespoons mayonnaise preferably homemade
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white wine vinegar
  • 1 pinch salt to taste
  • 1 pinch black pepper to taste
  • 2 tablespoons chives finely chopped
  • 2 tablespoons caviar for garnish

Method
 

Prepare the Eggs
  1. Place the eggs in a pot and cover with cold water. Bring to a boil over medium heat.
  2. Once boiling, cover the pot, remove from heat, and let sit for 10 minutes.
  3. Transfer the eggs to an ice bath to cool for 5 minutes, then peel the eggs.
Make the Filling
  1. Slice the peeled eggs in half lengthwise and remove the yolks.
  2. In a mixing bowl, mash the yolks with mayonnaise, Dijon mustard, white wine vinegar, salt, and pepper until smooth.
  3. Fold in the chopped chives.
Assemble the Deviled Eggs
  1. Using a pastry bag, pipe the yolk mixture back into the egg whites.
  2. Top each egg with a small dollop of caviar.
  3. Serve on a platter and enjoy.
