Dragon Deviled Eggs

Ingredients
  

Egg Filling
  • 6 large eggs hard-boiled
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon hot sauce optional
Decoration
  • 1 teaspoon black food coloring for coloring the filling
  • 1 tablespoon chives finely chopped, for garnish
  • 12 pieces black olives sliced, for decoration

Method
 

Prepare the Eggs
  1. Place the eggs in a pot and cover with water. Bring to a boil, then cover and remove from heat. Let sit for 10 minutes.
  2. Transfer the eggs to an ice bath to cool for 5 minutes, then peel and slice in half lengthwise.
Make the Filling
  1. Remove the yolks from the egg halves and place in a mixing bowl. Mash the yolks with a fork.
  2. Add mayonnaise, Dijon mustard, salt, black pepper, and hot sauce (if using) to the yolks. Mix until smooth.
  3. Add black food coloring to the yolk mixture and mix until the desired color is achieved.
Assemble the Deviled Eggs
  1. Spoon or pipe the black yolk mixture back into the egg whites.
  2. Top each egg with a slice of black olive to resemble a dragon eye and sprinkle with chopped chives.

Notes

These deviled eggs can be made a day in advance. Store in the refrigerator until ready to serve.
