Method
Prepare the Noodles
- Soak the wide rice noodles in hot water for about 30 minutes until softened, then drain and set aside.
Cook the Protein
- Heat the vegetable oil in a wok over medium-high heat. Add the sliced chicken and stir-fry until cooked through, about 5-7 minutes.
Add Aromatics and Vegetables
- Add minced garlic and ginger to the wok, stir-frying for 1 minute until fragrant. Then add the bell pepper, carrots, and broccoli, cooking for another 3-4 minutes until tender-crisp.
Combine Noodles and Sauce
- Add the soaked noodles to the wok along with the soy sauce, oyster sauce, fish sauce, sugar, and chili paste. Toss everything together and stir-fry for another 2-3 minutes until well combined.
Finish with Basil
- Remove from heat and stir in the fresh basil leaves. Serve hot.
