Ingredients
  

Vegetables
  • 2 cups Broccoli chopped
  • 1 cup Carrots sliced
  • 1 cup Bell Pepper diced
Protein
  • 1 can Chickpeas drained and rinsed
  • 1 pound Chicken Breast diced
Grains
  • 2 cups Brown Rice uncooked
Sauce
  • 3 tablespoons Soy Sauce
  • 1 tablespoon Olive Oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Ginger grated

Method
 

Prepare the Rice
  1. In a large pot, bring 4 cups of water to a boil. Add the brown rice, reduce heat, cover, and simmer for 30 minutes or until water is absorbed.
Cook the Chicken
  1. In a skillet, heat olive oil over medium heat. Add diced chicken breast and cook until browned and cooked through, about 7-10 minutes.
Add Vegetables
  1. Add chopped broccoli, sliced carrots, and diced bell pepper to the skillet with the chicken. Stir-fry for 5-7 minutes until vegetables are tender.
Combine and Serve
  1. Stir in chickpeas, soy sauce, garlic powder, and ginger. Cook for an additional 2-3 minutes. Serve over cooked brown rice.
