Ingredients
  

  • 3 cups bread flour or all-purpose flour
  • 2 teaspoons coarse sea salt
  • 1/2 teaspoon Platinum Yeast from Red Star instant yeast
  • 3/4 cup chopped walnuts or pecans
  • 3/4 cup dried cranberries
  • 1 tablespoon honey
  • 1 1/2 cups warm water about 95°F (35°C)

Method
 

  1. In a large bowl, stir the first 5 ingredients together. Mix the honey and warm water together, then pour on top and mix to combine. The dough will be very sticky; shape it into a ball as best you can.
  2. Cover tightly and allow to rise at room temperature for 12-18 hours until doubled in size.
  3. Turn the dough out onto a lightly floured surface and shape it into a ball. Transfer to a large piece of parchment paper. Score an X into the top of the dough and place it in a bowl to rest for 30 minutes.
  4. Preheat the oven to 475°F (246°C) and place your Dutch oven in the oven for 30 minutes.
  5. Carefully place the dough with parchment paper into the pot and cover with the lid.
  6. Bake for 25 minutes with the lid on. Remove the lid and continue baking for 8-10 more minutes until golden brown.
  7. Remove from the oven and allow to cool on a wire rack for at least 20 minutes before slicing.
