Method
- In a large bowl, stir the first 5 ingredients together. Mix the honey and warm water together, then pour on top and mix to combine. The dough will be very sticky; shape it into a ball as best you can.
- Cover tightly and allow to rise at room temperature for 12-18 hours until doubled in size.
- Turn the dough out onto a lightly floured surface and shape it into a ball. Transfer to a large piece of parchment paper. Score an X into the top of the dough and place it in a bowl to rest for 30 minutes.
- Preheat the oven to 475°F (246°C) and place your Dutch oven in the oven for 30 minutes.
- Carefully place the dough with parchment paper into the pot and cover with the lid.
- Bake for 25 minutes with the lid on. Remove the lid and continue baking for 8-10 more minutes until golden brown.
- Remove from the oven and allow to cool on a wire rack for at least 20 minutes before slicing.
