Easy Mint Chocolate Truffles

Ingredients
  

Truffle Base
  • 8 oz semisweet chocolate chopped
  • 1/2 cup heavy cream
  • 1 tsp peppermint extract
Coating
  • 1/2 cup cocoa powder
  • 1/2 cup crushed peppermint candies

Method
 

Prepare the Truffle Base
  1. In a double boiler, melt the chopped semisweet chocolate with the heavy cream, stirring until smooth.
  2. Remove from heat and stir in the peppermint extract.
  3. Allow the mixture to cool to room temperature, then refrigerate for about 30 minutes until firm.
Form the Truffles
  1. Using a melon baller or your hands, scoop out small amounts of the chilled chocolate mixture and roll into balls.
  2. Roll each truffle in cocoa powder or crushed peppermint candies to coat.
Chill and Serve
  1. Place the coated truffles on a baking sheet lined with parchment paper and refrigerate until firm, about 15 minutes.
  2. Serve chilled or at room temperature.
