Ingredients
  

Filling
  • 4 cups rhubarb, chopped fresh or frozen
  • 1 cup granulated sugar adjust to taste
  • 2 tablespoons all-purpose flour for thickening
Topping
  • 1 cup old-fashioned oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar packed
  • 1/2 cup butter melted
  • 1/2 teaspoon cinnamon optional

Method
 

Prepare the Filling
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine the chopped rhubarb, granulated sugar, and flour. Mix well and set aside.
Make the Topping
  1. In another bowl, mix together the oats, flour, brown sugar, melted butter, and cinnamon until crumbly.
Assemble and Bake
  1. Spread the rhubarb mixture evenly in a baking dish. Sprinkle the topping over the rhubarb. Bake for 30 minutes or until the topping is golden brown and the rhubarb is bubbly.
Serve
  1. Let cool slightly before serving. Enjoy warm, optionally with vanilla ice cream.
