Ingredients
  

Noodles
  • 8 oz vermicelli noodles dry
Vegetables
  • 1 cup bell pepper sliced
  • 1 cup carrots julienned
  • 1 cup snap peas
  • 1 cup green onions chopped
Sauce
  • 3 tbsp soy sauce low sodium
  • 2 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1 tsp ginger grated
  • 2 cloves garlic minced
Garnish
  • 2 tbsp sesame seeds toasted

Method
 

Preparation
  1. In a large skillet, heat sesame oil over medium heat.
  2. Add garlic and ginger, saut? for 1 minute until fragrant.
  3. Add bell pepper, carrots, and snap peas; stir-fry for 3-4 minutes until tender.
Cooking Noodles
  1. Add vermicelli noodles to the skillet along with soy sauce, rice vinegar, and honey.
  2. Pour in 2 cups of water, bring to a boil, then reduce heat and simmer for 5-7 minutes until noodles are cooked.
  3. Stir in green onions and cook for an additional minute.
Serving
  1. Serve hot, garnished with toasted sesame seeds.
