  • 2 medium carrots use crunchy, fresh carrots
  • 1 medium daikon radish substitute with regular radish if unavailable
  • 1 cup rice vinegar essential for tangy flavor
  • 1 tablespoon sugar adjust based on taste preference
  • 1 teaspoon salt enhances flavors and draws out moisture

  • 2 cloves garlic minced for extra flavor

Method
 

Preparation
  1. Peel and julienne the carrots and radishes into thin strips.
  2. In a bowl, combine vinegar, sugar, and salt. Stir until the sugar dissolves completely.
  3. Place the prepared carrots and radish in a clean jar or container. Pour the brine over them, ensuring they are fully submerged.
  4. Close the jar tightly and refrigerate for at least 1 hour, ideally overnight.
  5. After marinating, serve the pickles as a side dish or topping.
