Ingredients
  

Egg Mixture
  • 8 large eggs
  • 1/2 cup milk can use dairy or non-dairy
  • 1 cup cheddar cheese shredded
  • 1 cup spinach fresh, chopped
  • 1/2 cup bell pepper diced
  • 1/2 cup onion diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Prepare the Muffin Cups
  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a mixing bowl, whisk together the eggs and milk until well combined.
  3. Stir in the cheese, spinach, bell pepper, onion, salt, and pepper.
  4. Pour the egg mixture evenly into the muffin tin, filling each cup about 2/3 full.
  5. Bake in the preheated oven for 20 minutes or until the egg is set and lightly golden.
  6. Allow to cool slightly before removing from the muffin tin.
