Ingredients
  

Corn
  • 4 ears corn on the cob husked
Toppings
  • 1/2 cup mayonnaise
  • 1/2 cup cotija cheese crumbled
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder

Method
 

Grilling the Corn
  1. Preheat the grill to medium-high heat.
  2. Place the husked corn directly on the grill and cook for about 10-15 minutes, turning occasionally until charred and tender.
Preparing the Topping
  1. In a bowl, mix together mayonnaise, lime juice, chili powder, salt, paprika, and garlic powder until well combined.
  2. Once the corn is grilled, remove it from the grill and brush the mayonnaise mixture generously over each ear of corn.
  3. Sprinkle crumbled cotija cheese over the corn and serve immediately.
