Elote, or Mexican street corn, is a popular snack made with grilled corn on the cob slathered in a creamy sauce and topped with cheese and spices.

Ingredients
  

Corn
  • 4 ears sweet corn husked
Sauce
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 teaspoon lime juice freshly squeezed
  • 1 teaspoon chili powder
  • 1 clove garlic minced
Toppings
  • 1/2 cup cotija cheese crumbled
  • 1 tablespoon cilantro chopped
  • 1 teaspoon paprika
  • 1 teaspoon salt

Method
 

Grill the Corn
  1. Preheat the grill to medium-high heat. Place the husked corn directly on the grill and cook for about 10-15 minutes, turning occasionally, until the corn is charred and cooked through.
Prepare the Sauce
  1. In a bowl, combine mayonnaise, sour cream, lime juice, chili powder, and minced garlic. Mix well until smooth.
Assemble the Elote
  1. Once the corn is grilled, remove it from the grill and brush the sauce generously over each ear of corn.
  2. Sprinkle crumbled cotija cheese, chopped cilantro, paprika, and salt over the sauced corn.
Serve
  1. Serve the elote immediately while warm, with extra lime wedges on the side if desired.

Notes

For a spicier version, add more chili powder or a dash of hot sauce to the sauce mixture.
