Ingredients
  

Corn Base
  • 4 ears corn on the cob grilled or boiled
  • 1 cup mayonnaise for creaminess
  • 1 cup cotija cheese crumbled
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon chili powder for seasoning
  • 1 teaspoon salt to taste
  • 1 teaspoon pepper to taste
Toppings
  • 1/4 cup cilantro chopped
  • 1/4 cup jalape?os diced, optional
  • 1 lime lime wedges for serving

Method
 

Prepare the Corn
  1. Grill or boil the corn until tender, then let it cool slightly before cutting the kernels off the cob.
Mix the Ingredients
  1. In a mixing bowl, combine the corn kernels, mayonnaise, cotija cheese, lime juice, chili powder, salt, and pepper. Mix well.
Assemble the Cups
  1. Spoon the corn mixture into serving cups and top with chopped cilantro and diced jalape?os if desired.
Serve
  1. Serve with lime wedges on the side for an extra burst of flavor.
