Ingredients
  

Eggs
  • 6 large eggs hard-boiled
Filling
  • 1/4 cup mayonnaise preferably homemade
  • 1 tablespoon chipotle in adobo sauce finely chopped
  • 1 teaspoon lime juice
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Toppings
  • 1/4 cup corn kernels grilled or roasted
  • 2 tablespoons cilantro chopped
  • 1 tablespoon feta cheese crumbled
  • 1 teaspoon smoked paprika

Method
 

Prepare the Eggs
  1. Place eggs in a pot and cover with water. Bring to a boil, then cover and remove from heat. Let sit for 10 minutes.
  2. Transfer eggs to an ice bath to cool, then peel and slice in half lengthwise.
Make the Filling
  1. In a mixing bowl, combine the yolks, mayonnaise, chipotle, lime juice, garlic powder, salt, and pepper. Whisk until smooth.
Assemble the Deviled Eggs
  1. Spoon or pipe the filling back into the egg whites.
  2. Top each egg with corn, cilantro, feta, and a sprinkle of smoked paprika.
