Ingredients
  

Vegetables
  • 1 pound Baby Potatoes halved
  • 1 pound Asparagus trimmed
  • 1 head Garlic cloves separated and peeled
Seasoning
  • 3 tablespoons Olive Oil extra virgin
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper freshly ground
  • 1 teaspoon Paprika smoked
  • 1 tablespoon Fresh Parsley chopped, for garnish

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the halved baby potatoes, olive oil, salt, pepper, and paprika. Toss until evenly coated.
  3. Spread the potatoes in a single layer in a baking dish and roast for 15 minutes.
Cooking
  1. After 15 minutes, remove the baking dish from the oven and add the asparagus and garlic cloves. Toss gently to combine.
  2. Return the dish to the oven and roast for an additional 15-20 minutes, or until the potatoes are tender and golden brown.
  3. Remove from the oven and garnish with fresh parsley before serving.
