Dough Ingredients
  • 4 cups Italian 00 flour
  • 2 tsp fast action dried yeast
  • 1 1/3 cups lukewarm water
  • 1 tbsp olive oil
  • 1 pinch salt
  • 0.5 tsp sugar
  • for dusting semolina or regular flour
Cheese Toppings
  • 2 balls mozzarella
  • 0.5 cup gorgonzola
  • 0.5 cup goat cheese
  • 0.5 cup parmesan, freshly grated
  • 0.5 cup crushed strained tomatoes
  • Black pepper optional

Method
 

Dough Preparation
  1. Put the flour, salt, and yeast in a bowl, ensuring the salt and yeast are on opposite sides.
  2. Make a well in the center and add the water and olive oil. Mix until a rough dough forms.
  3. Dust a clean surface with flour and knead the dough for around 10 minutes until smooth and elastic.
  4. Add 1/2 tbsp of olive oil to a large bowl and coat it. Shape the dough into a ball and place it in the bowl, rubbing a tiny amount of olive oil on top.
  5. Cover with plastic wrap and leave in a warm place for at least 3-4 hours or until tripled in size.
Cooking Process
  1. Preheat the oven to at least 450?F/230?C and add baking trays to heat up.
  2. Cut the dough into 2 or 4 pieces, then roll out or shape them to fit the baking tray.
  3. Remove the baking tray from the oven, sprinkle with semolina or flour, and carefully place the pizza dough on top.
  4. Spread the pizza base evenly with tomato sauce and sprinkle with cheese. Bake until melted and golden, around 10-15 minutes.
