Ingredients
  

Egg Filling
  • 6 large eggs hard-boiled
  • 3 tablespoons mayonnaise preferably homemade
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white wine vinegar
  • 1 tablespoon fresh chives finely chopped
  • 1 pinch salt
  • 1 pinch black pepper
Garnish
  • 1 tablespoon paprika for sprinkling
  • 2 tablespoons fresh parsley finely chopped

Method
 

Prepare the Eggs
  1. Place eggs in a saucepan and cover with cold water. Bring to a boil, then cover and remove from heat. Let sit for 10 minutes.
  2. Transfer eggs to an ice bath to cool for 5 minutes, then peel and slice in half lengthwise.
Make the Filling
  1. Remove yolks from the egg whites and place in a mixing bowl. Mash yolks with a fork.
  2. Add mayonnaise, Dijon mustard, white wine vinegar, chives, salt, and pepper to the yolks. Mix until smooth and creamy.
Assemble the Deviled Eggs
  1. Spoon or pipe the yolk mixture back into the egg white halves.
  2. Sprinkle with paprika and garnish with chopped parsley before serving.

Notes
