  • 1 1/2 cups lightly pureed strawberries
  • 1 tsp vanilla extract

  • 8 oz full fat cream cheese room temperature
  • 1/2 cup unsalted butter room temperature
  • 4 cups powdered sugar
  • 1/4 cup lightly pureed strawberries

Method
 

Baking the Cake
  1. Preheat the oven to 350F and grease and line a 9?13 baking pan with a strip of parchment paper.
  2. Puree the strawberries in a food processor until almost completely pureed with a few small chunks.
  3. In a bowl, whisk together the all purpose flour, cake flour, baking powder, baking soda, and salt; set aside.
  4. In a large bowl, whisk together the oil, sugar, eggs, strawberry puree, and vanilla extract.
  5. Fold in the dry ingredients until the batter just comes together.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean with a few moist crumbs.
  8. Let the cake cool completely in the pan before frosting. Refrigerate for at least an hour if you want to lift the cake out of the pan.
Making the Frosting
  1. Make the frosting while the cake bakes by mixing the cream cheese and butter with a mixer.
  2. Gradually mix in the powdered sugar followed by the strawberry puree.
  3. Refrigerate the frosting for an hour to thicken.
Frosting the Cake
  1. Once the cake is cooled, spread the frosting on top. Serve immediately or store in the fridge for up to 7 days.
