Ingredients
  

Zucchini
  • 2 medium Zucchini sliced into rounds
Breading
  • 1 cup All-purpose flour
  • 1 cup Breadcrumbs preferably panko for extra crunch
  • 2 large Eggs beaten
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper to taste
  • 1 teaspoon Garlic powder
Oil
  • 2 cups Vegetable oil for frying

Method
 

Prepare Zucchini
  1. Wash and slice the zucchini into 1/4 inch rounds.
Set Up Breading Station
  1. In one bowl, place the flour. In a second bowl, beat the eggs. In a third bowl, combine breadcrumbs, salt, pepper, and garlic powder.
Bread the Zucchini
  1. Dip each zucchini slice first in flour, then in the beaten eggs, and finally in the breadcrumb mixture.
Fry the Zucchini
  1. Heat vegetable oil in a frying pan over medium-high heat. Fry the breaded zucchini slices in batches until golden brown, about 2-3 minutes per side.
Drain and Serve
  1. Remove fried zucchini from the pan and drain on paper towels. Serve hot.
