Prepare Zucchini
- Wash and slice the zucchini into 1/4 inch rounds.
Set Up Breading Station
- In one bowl, place the flour. In a second bowl, beat the eggs. In a third bowl, combine breadcrumbs, salt, pepper, and garlic powder.
Bread the Zucchini
- Dip each zucchini slice first in flour, then in the beaten eggs, and finally in the breadcrumb mixture.
Fry the Zucchini
- Heat vegetable oil in a frying pan over medium-high heat. Fry the breaded zucchini slices in batches until golden brown, about 2-3 minutes per side.
Drain and Serve
- Remove fried zucchini from the pan and drain on paper towels. Serve hot.
