Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
Filling
  • 2 cups fresh strawberries hulled and sliced
  • 1 cup heavy cream cold
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Method
 

Prepare the Crust
  1. In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
  2. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish.
  3. Chill the crust in the refrigerator for 30 minutes to set.
Make the Filling
  1. In a separate mixing bowl, whip the heavy cream until soft peaks form.
  2. Gradually add powdered sugar and vanilla extract while continuing to whip until stiff peaks form.
  3. Gently fold in the sliced strawberries and lemon juice until evenly distributed.
Assemble and Freeze
  1. Spoon the strawberry filling into the chilled crust, spreading it evenly.
  2. Cover the pie with plastic wrap and freeze for at least 3 hours or until firm.
Serve
  1. Remove the pie from the freezer and let it sit at room temperature for about 10 minutes before slicing.
  2. Serve slices chilled, optionally garnished with additional strawberries or whipped cream.
