Method
Prepare the Crust
- Preheat the oven to 350°F (175°C). In a mixing bowl, combine flour and sugar. Add cold butter and mix until crumbly.
- Stir in the egg yolk and ice water until the dough forms. Press the dough into a tart pan and prick the bottom with a fork.
- Bake for 20-25 minutes or until golden brown. Allow to cool completely.
Make the Filling
- In a mixing bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until well combined.
- In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture.
Assemble the Tart
- Spread the cream cheese filling evenly over the cooled tart crust.
- Arrange the sliced strawberries, kiwi, blueberries, and raspberries on top of the filling.
- Chill the tart in the refrigerator for at least 1 hour before serving.
