Ingredients
  

Crust
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter cold and cubed
  • 1 large egg yolk
  • 2 tablespoons ice water
Filling
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese softened
Toppings
  • 1 cup strawberries sliced
  • 1 cup kiwi sliced
  • 1 cup blueberries
  • 1 cup raspberries

Method
 

Prepare the Crust
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine flour and sugar. Add cold butter and mix until crumbly.
  2. Stir in the egg yolk and ice water until the dough forms. Press the dough into a tart pan and prick the bottom with a fork.
  3. Bake for 20-25 minutes or until golden brown. Allow to cool completely.
Make the Filling
  1. In a mixing bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until well combined.
  2. In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture.
Assemble the Tart
  1. Spread the cream cheese filling evenly over the cooled tart crust.
  2. Arrange the sliced strawberries, kiwi, blueberries, and raspberries on top of the filling.
  3. Chill the tart in the refrigerator for at least 1 hour before serving.

Notes

For best results, use fresh seasonal fruits. You can also glaze the fruit with a light apricot jam for added shine.
