Ingredients
  

Crust
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter cold and cubed
  • 1 large egg yolk
  • 2-3 tablespoons ice water
Filling
  • 1 cup heavy cream whipped
  • 1/2 cup cream cheese softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
Toppings
  • 1 cup mixed fresh fruit such as strawberries, blueberries, and kiwi
  • 2 tablespoons apricot jam for glazing

Method
 

Prepare the crust
  1. In a mixing bowl, combine flour and sugar. Add cold butter and mix until crumbly.
  2. Add egg yolk and ice water, mixing until a dough forms. Wrap in plastic and refrigerate for 30 minutes.
  3. Preheat the oven to 350?F (175?C). Roll out the dough and press it into a tart pan.
  4. Prick the bottom with a fork and bake for 20-25 minutes until golden. Let cool.
Make the filling
  1. In a bowl, beat together cream cheese and powdered sugar until smooth.
  2. Fold in the whipped cream and vanilla extract until well combined.
Assemble the tart
  1. Spread the cream filling evenly over the cooled crust.
  2. Arrange the mixed fresh fruit on top of the filling.
  3. Heat apricot jam until melted and brush over the fruit for a glaze.
