Ingredients
  

Potatoes
  • 2 pieces potatoes (Russet or Yukon Gold)
Butter
  • 0.5 stick salted butter (55g / 4 tablespoons)
Flavoring
  • 1 clove garlic minced
  • 0.25 cup freshly grated parmesan (4 tablespoons)
  • 1 tablespoon fresh thyme leaves

Method
 

Cooking Instructions
  1. Preheat the oven to 400F / 200C.
  2. Grease a muffin tin well with oil and place to one side.
  3. Place the butter and minced garlic in a small pot and place on a low heat so that the butter slowly melts.
  4. Meanwhile, peel the potatoes and cut them into round slices with a knife, about ? inch thick. Add to a large bowl.
  5. Pour the melted garlic butter over the potatoes and add the parmesan and thyme leaves.
  6. Stack the potato slices in the greased muffin tin. Top the potato stacks with any remaining parmesan mix from the bowl.
  7. Roast for around 40 minutes until golden brown and the potatoes are cooked through.

Notes

Allow the stacks to cool completely before storing them in an airtight container in the fridge for up to three days. Reheat in a 350F oven to maintain crispiness.
